A blended salad is a mixture of raw, leafy greens and other plant based foods blended together to make a smooth, creamy salad with a velvety consistency. Eating a salad prepared in this manner is quick and convenient, and increases absorption of vital nutrients. If you add fruits, nuts, and other ingredients, these additional nutrients will help promote good health.

Carrots, sweet potatoes, and beets are high in starch, though if you consume them raw in a salad, only a small percent of the calories are absorbed. Green vegetables and leafy greens are protein-rich and they are comparatively low in calories. These vegetables and others have a very high nutrient-to-calorie ratio.

Chewing vegetables is always preferred over blending, but most people don’t chew their salads well enough. Therefore many nutrients go right through you. When you consume a blended salad, you are assuring yourself of a thorough absorption and digestion of good nutrients and phytochemicals. Other advantages are; more vegetables can be consumed and by adding nuts or seeds your fat and protein intake will also increase.

When making a blended salad I usually start with a few ounces of lettuce, raw spinach and any mix of raw vegetables including nuts or seeds. I put a tomato, or a fruit such as an orange or a banana, in the blender and add the leafy greens on top with a little cinnamon. Add a little water or juice and blend to the right consistency.
